Day three.

Well guys, today is day three of no meat for Mikayla. It's been hard (not going to lie), but I have been eating a lot of yummy things in the past few days. Thought I would share.




Disclaimer: In no way to I claim to be an expert on vegetarianism, healthy eating, etc. These are just ideas, and ways that I live my day-to-day life. Kthanks.



1. Eggs scrambled with onion, garlic, and baby spinach + whole wheat toast.


2. Black bean + roasted veggie quesadilla with mozarella on Ezekiel tortillas. I use Bethanny Frankel's Healthy Taco seasoning recipe, and subsitute black beans for meat. I roasted the veggies in a 425 degree oven for about 5 minutes, after I tossed them in olive oil. Delicious!





3. "Gyro" made with brown rice + baby spinach + tomatoes + onions + black olives + feta + tzaziki (greek yogurt with dill), on whole wheat flatbread.




4. Margherita pizza on flatbread.


Preheat oven to 350 degrees. Drizzle flatbread with olive oil. Top with sliced tomatoes + Mozarella + fresh basil + salt in pepper. Bake until cheese is melted and it is warmed throuhgout. Drizzle with more olive oil + salt + pepper.

5. Black bean nachos with leftover black beans + roasted veggies + mozarella + black olives + fresh tomatoes!


These are just a few of the things I have come up with in the past few days. I have been eating more veggies (particularly spinach) than I have in my whole life. I fell really good. That little twinge of missing meat is definately there, but after three days the idea of putting meat in my mouth (HA.HA.) seems disgusting. Anxious for Thanksgiving (and all the ridicule I will recieve)!

hello you...goodbye meat.

Hello long lost friends (speaking to no one)!

My life these past few months has been very busy and very stressful. New job, second last semester of college, money woes...blah blah. However, I have recently been doing very well and have felt very un-stressed. Well, as un-stressed as a stress-ball like me can be.

In regards to this, I have been thinking about cutting meat out of my diet again. I have tried veganism three times (longest span being 6 months) and vegetarianism once. I have always let myself and other things get in my the way of accomplishing a lifestyle that I think I would be very fond of.

Let's get some things straight. I am not an animal acitivist or even animal obsessed. Hey I love animals just as much as the next girl, but this has never been enough for me to stop eating meat and animal products alltogether. In addition, I love to cook. Cooking is my life. My favorite. My everything. The air I breathe...ok you get the picture. So, as you could guess it terrifies me to think of giving up my favorite dishes or giving up cooking for the people I love. But let's not forget, I was a vegan for six straight months. Six wonderful, difficult, expensive, stressful, beautiful, invigorating months. I did it. I loved it. I felt great. Therefore, I know I can do it (vegetrianism at the moment). I can give up my Mom's meatloaf and chicken spaghetti and still enjoy her perfect mashed potatoes and amazing pecan pie, unless there comes a time when I choose to give up dairy. I can still cook for my friends and loved ones. I can still live my life, eat delicious food, and cook my little heart out!

So you might ask yourself: "If she isn't an animal activist and she loves meat, why do it"? Well, as I said before I was a Vegan for a six month period. I was a freshman in college, I worked at a streakhouse, and had eaten meat my WHOLE life. I was referred to a book titled Skinny Bitch by a friend. Just like the title, Skinny Bitch, is an in-your-face, no reservations guide to Veganism. It is shocking, and truthful. It turned my whole Texas/meat-eating/cheese-filled/omnivorous life upside down. I chose to become Vegan at that point. At first it was hard, and really expensive. It took a while for me to find the products and recipes I liked, so it was a bit of an experiment. However, it was totally worth it. I felt amazing. Not only because I was eating no dairy, no meat, and 90% organic, but because it was empowering. I had the power to change my own life and choose what I put in my life. I was constantly being argued with, made fun of, and questioned. It didn't matter. I made a life choice, and I stuck to it...for myself.

Well, as you may have guessed, that went downhill. A lot of things started to change (for the worse) in my life and I kind of forgot about myself for a while. I jumped back on the meat/dairy bandwagon and have been on it ever since (with the exception of Vegan dabbling). So, what's gonna make it stick this time? I'm not sure. Maybe it won't. However, I am ready again to do something for me, that has been a goal of mine since I was 12 years old. Yes, 12.

So, "here's to being meat-free and good to myself". Cheers.

boy.

My boy returned from tour on Saturday, and I have been super busy enjoying his company. Saturday night I impressed myself by making a whole roasted chicken. I had never done it before, and I was super scared. However it turned out super wonderful and the leftovers made a delicious chicken salad. I also made my first Key Lime pie from scratch. It was the most wonderful recipe and I will be posting the recipe soon!


On Sunday we hung out at his parent's house out in the country. We planned on swimming but the high for the day was only 80 degrees. It was so nice and breezy, so no swimming, but it was such a nice break from the heat we've had this summer. We grilled hot dogs and had a couple of beers. It was hands down the best Sunday I've had in over a month :)


I'm so thankful for my boy to be home, but I am getting ready for school to start next week. It will be the beginning of my last year of college. Very excited and very nervous all at the same time!

brunch.



I had a lovely Sunday brunch with my friend Lauren this weekend. We have been meaning to do it for forever. It was so fun! Lauren brought over a delicious Mozzerella, Gouda, and Broccoli quiche; it was to die for! We also had grapefruit mimosas, an idea I stole from Jett's in Marfa. They were so yummy, way better than regular ol' mimosas. I also made a delicious coconut bread pudding, which we topped with vanilla ice cream. It was a wonderful day; full of yummy food and good conversation. It's days like those that remind me I need to slow down, and enjoy all of the wonderful little things in my life.

Recipe: Parmesan & Basil Baked Eggs

I found this recipe from my friend Megan, was instantly obsessed with it! It's super easy to make! It's also very fun to experiment with different ingredients. You can also make as many or few as you would like :)


You will need:
Bacon
Eggs
Cheese
Fresh Herbs
Salt & Pepper
Muffin Tin
Frying Pan

Preheat oven to 400 degrees.
First cook the bacon until it is browned and cooked through, but not crisp; one for each baked eggs, plus some extra for the botoms of the eggs. Let the bacon cool. While the bacon is cooling, chop up the herbs and grate your cheese. I used parmesan and fresh basil, but you can use whatever combo you like. Be creative!



Next wrap the bacon in the inside of the muffin tins. Crumple the extra bacon in the bottom.



Now crack and egg into each. Sprinkle with salt and pepper, then cheese and herbs.



Bake in the oven for 15, or until eggs are set.

i think i was blind.

As I mentioned before, my boyfriend is on tour with his band for a month. I am so happy for him and all of the amazing places he gets to see. However, I am a girl, and my girlfriend tendencies/feelings were bound to arise sometime. This came (of course) in the form of a three hour mental breakdown. Wonderful. I got an overwhelming sinking feeling the other night about how big of a deal it REALLY is that my boyfriend is in a touring band. I trust him 100 percent; it's not about that. It just gets a little overwhelming at times that, in all honesty, he would rather be on the road. Of course his sweet words, and the fact that I love him so-very much helped to calm my nerves. I guess it just comes down to whether or not I would rather deal with the emotions that come along with him being gone all the time as a lifestyle, or do without him. Truth be told, I will always choose him.
